What is couverture chocolate?

The grade pastry chefs use. It carries a higher proportion of cocoa butter than ordinary eating chocolate, which gives it a cleaner snap, a smoother melt and a longer finish. It costs more to make and it tastes like it does.

Who makes it?

Bakers Wanna Bake, in small batches in the Yass Valley, dark at 54.5% and milk at 33.6%, set with freeze-dried fruit, nuts and, in the case of the salted caramel pretzel, the flavour that outsells everything else they make.

We also carry Lindt Lindor assorted truffles, for a gift that needs no explaining.

What are the allergens?

The bars and the chocolate flowers contain nuts, dairy and soy. The miniatures contain dairy, soy and wheat. All of it is made in a facility that also processes nuts, eggs, wheat, soy and dairy, so none of it is suitable for anyone avoiding gluten.
